I feed beef, chicken, hens, rabbit, lamb, turkey, fish (I cook it, and it's either Tilapia or Catfish and I give it once in 7-10 days), organs like liver, kidneys, bizzards, hearts. The boys cannot eat bones, so the butcher grinds for me chicken necks and wings, and I give it to them.
You'll hardly find many organs in Raleys' or just in good areas (at least it's my experience). In not so good areas or in Azian meat markets they do sell organs.
The whole "prey model" is 80% muscle meat (hearts and bizzards, f.i. are considered muscle meat), 10% bones and 10% organs with 5% liver. In general bones firm the stool and liver softens the stool, so you need to fnd the right balance. Although I didn't experience any stool problems with boys with the exception of when I gave them antibiotics and didn't give probiotics but the problems were really minor anyway.
If you decide to go on a raw diet I'd highly recommend that you maybe read raw diet forums like

www.catforum.com, they have tons of valuable information and tons of stories when sick cats got very healthy in no time. Also, they say it's much cheaper to feed raw (if you do it right) than to feed them premium can food like 95% EVO.
If you feed raw expect the kitty to have bowel movements once in a few days and little and with almost no smell - that's because most nutrition goes "in" and stays

. Also, the kitty will be very active and energetic.
I'm VERY happy with raw diet and I wouldn't change it for the world - like most of rawfeeders.
